Collagen rich Shakshuka is a nice and easy simple one-skillet dish of gently poached eggs in a tasty mixture of simmering tomatoes, red peppers, onions and garlic and spices.

  • 4 Eggs
  • ¼ Cup Feta cheese
  • 2 tbsp Collagen powder
  • 1 Red bell pepper (chopped and seeded)
  • 1 Onion (diced)
  • 1 Tin Diced tomatoes
  • 2 Garlic cloves (minced)
  • 2 tbsp Tomato paste
  • 2 tbs Olive oil
  • 1 tbsp Chilli powder
  • 1 tsp Cayenne pepper
  • 1 tsp Paprika
  • 1 tsp Thyme
  • Salt and Pepper
  • 1 tsp Cumin
  • ¼ Cup Cilantro


  1. In a medium cooking pan or cast iron skillet, cook olive oil on medium heat.
  2. Add in diced onion and minced garlic until they become soft.
  3. Once onion and garlic are cooked, add in the chopped pepper and mix in the Collagen powder and spices. Mix in well and cook for about 5-8 minutes or until pepper is soft.
  4. Add in tomato paste and tomatoes. Mix all ingredients together and cook until bubbled. Reduce heat and crack each egg into the sauce.
  5. Cook on medium heat for 10-15 minutes or until eggs are cooked. Garnish with feta and cilantro.
  6. Serve and enjoy!
